I am firmly in the camp of real food, simple preparation and great taste. This can all happen through the use of fermentation. It is a happy accident that most fermented foods are also healthy. I live in the Colorado Front Range. This is a dry climate with wide swings in temperature and low humidity. Not ideal for fermenting but with only a little encouragement I can ferment almost anything. I will post links to my local and online sources.
